I love these tacos and they are usually a huge hit when people come for dinner. They are a little different and that makes the yummy!
1.25 lbs of lean ground beef
1/2 bag frozen country style hash browns
Cheese (i prefer med cheddar)
1 avocado
1 tomato
Lettuce
Corn or flour tortillas
Canola oil for frying
Sour Cream
Brown ground beef season with salt, pepper and garlic. Fry up potatoes, season with salt pepper and garlic.
While all of this is cooking, I slice the avocado, chop the tomatoes, and lettuce, sometimes its really good if want to add some chopped onion. I also shred the cheese and set everything up buffet style so people can put their tacos together.
I cook our own tortillas in a little bit of cooking oil till crispy, much better than the store bought taco shells.
Also good with, salsa, a tiny bit of Parmesan cheese, guacamole. You can use jack, sharp cheddar or co-jack cheese instead of medium cheddar.

Pork Loin Roast with Mushroom Gravy
This was delicious! You can do this with the Pork Loin Roast or Pork Chops whichever you prefer. I had the roasts in my freezer.
Pork loin roast or pork chops
2 packages dry mushroom gravy mix
2 packages mushrooms
Slice pork loin roast to desired thickness, place in pan and brown, I sprinkle on some salt, pepper and garlic powder for a little extra flavor. Once browned on both sides, cooked mostly through, remove from pan and add mushrooms, cook till just barely tender then remove from pan. Mix gravy according to instructions on the package but don't bring to boil. Once mixed add pork loin roast and mushrooms, stir all together and let simmer for about 45 minutes.
While this was simmering, I scrubbed and boiled some potatoes and thew together some simple mashed potatoes and steamed some broccoli and cauliflower to go with it.

So the other night while making dinner and blogging about my Wealthy Affiliate experience, I thought, hey why not share my quick, easy and somewhat cheap recipes.
All of my recipes are pretty much family recipes that have been passed down for years, some of them from books, some of them made up, some of them off cans of soup, or packages of noodles. Some of them may be super common and something you eat on a regular basis.
I hope you enjoy reading and trying new things, as we are hoping to try new recipes also. And hopefully we can all get some great ideas for that question that is asked almost daily, "What's for dinner?"
